Special Issue Information
Dear Colleagues,
Phytochemicals from plant extracts (including polyphenols, carotenoids, plant sterols, glucosinolates and polysaccharides) are of increasing interest in the field of food sciences and technologies due to their health benefits, nutritional value, and potential for use in sustainable food chains. Several food sources naturally contain valuable amounts of these bioactive compounds and have significant implications in terms of chemical stability, health benefits, and sensory attributes; these foods include fruits, vegetables, crops, plant beverages, and wine, as well as new unexploited and under-utilized sources (i.e., algae). Moreover, in recent decades, there has been an increase in scientific studies focusing on the use of plant extracts as food additives or technological aids, and on their recovery from food wastes. This Special Issue aims to highlight the most recent knowledge and advances in the field of plant extracts and their phytochemical profiles; we welcome both critical reviews and research articles which investigate their role on biological activities, either in vitro or in vivo, with a focus on their extraction, bioaccessibility, and bioavailability.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
