Dear Colleagues,
The nexus between good food and good health is widely acknowledged as fundamental. However, transformative shifts in global food systems during recent decades have yielded considerable adverse effects on health and well-being. These repercussions range from food insecurity and chronic diseases to environmental degradation, reduced economic opportunities, and the erosion of cultural values. Importantly, these impacts are not uniform and are experienced disparately across the globe and among diverse groups, contributing to disparities in health outcomes and social inequalities.
The health impacts generated by food systems are severe, widespread, and closely linked to industrial food and farming practices. An urgent case for reforming industrial food practices can be made on the grounds of protecting human health. This Special Issue aims to explore the intricate relationship between the methods by which we transform raw ingredients into consumable delights, the physiological processes that occur during digestion, and the subsequent impact on human health.
Authors are invited to submit original research articles, reviews, and perspectives addressing the multidimensional aspects of food processing, digestion, and health. Manuscripts exploring the interdisciplinary nature of this topic are particularly encouraged.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
