Special Issue Information

Dear Colleagues,

Bioactive compounds exist in different forms such as flavonoids, co-enzymes, polyphenols and phytoestrogens, to name a few. Bioactive compounds in plant and animal sources are extremely important for human health as they provide extra nutrients required for the maintenance of human health. Recent research investigations combining structural chemistry, engineering, chromatography food processing and biophysics have provided novel ideas in terms of the extraction, isolation and characterisation of bioactive compounds from food sources. The arrival of 3D printing and advances in food valorisation have provided new angles in bioactive isolation and utilisation. This proposed Special Issue will focus on all aspects of the extraction, isolation and characterization of bioactive compounds incorporating research and reviews from leading researchers across the globe.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
