Special Issue Information

Dear Colleagues,

Ultraviolet light in the germicidal wavelength range from 200 to 280 nm (UVC) can inactivate a broad range of microbial pathogens including bacteria, fungi, viruses, and cysts in air, water, and surfaces and thus has been successfully used to enhance the safety and shelf-life of foods while retaining quality and nutrition. More recently, UV-light-emitting diodes (LEDs) with simple and flexible designs offering multiple wavelengths, high energy efficiency, and long life have been developed with demonstrated germicidal effects between the wavelengths of 260 and 280 nm.

These UV-light-emitting systems are currently being used to disinfect water; pasteurize juice/beverages; reduce pathogen loads in air and on meat, poultry, processing equipment, and food contact surfaces; and serve as secondary barriers to processing plant cleaning and sanitation operations.

This Special Issue aims to present the latest knowledge and new developments in using ultraviolet light technology in food safety.
