Special Issue Information

Dear Colleagues,

We invite you to submit your contributions to this Special Issue of Foods aiming to present a collection of studies on the role and effect of functional foods, including edible fungi and lactic acid bacteria in food safety, preservation and treating/or preventing various human diseases due to their nutritive, bioactive and therapeutic values, as well as food-toxin-neutralizing and food-presentative effects. Furthermore, the applications and mechanisms relating these functional food extracts/or ingredients in food industries are encouraged and will be taken into consideration. Current original research and reviews on these topics are welcome.

We eagerly anticipate receiving your valuable contributions.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
