Dear Colleagues,
A growing number of studies underline the diversity in potential bioactive compounds present in agri-food matrices that, if extracted, can have an immense added value in multiple applications and can be exploited in the functional food, nutraceutical, pharmaceutical, and cosmeceutical industries. Increasing scientific evidence highlights the role of food-related bioactive compounds in the prevention or amelioration of some diseases. In this regard, efficient and sustainable extraction procedures, followed by comprehensive chemical and functional characterization with high-throughput bioanalytical and omics technologies, represent significant methodological advances to scientifically support health claims of new food-related bioactive molecules.
In this regard, the increasingly frequent multi-omics approaches, such as Foodomics, are contributing to deciphering the molecular mechanisms that underlie the beneficial effects of dietary phytochemicals in preventing the initiation and/or development of major pathologies such as cancer and neurodegenerative and cardiovascular diseases, among others.
This Special Issue is a unique opportunity to gather updated state-of-the-art research studying the recovery of bioactive compounds from food and agri-food sources and their bioactive characterization, making use of the latest extraction, bioanalytical, and omics technologies.
