Special Issue Information

Dear Colleagues,

The latest achievements in science and technology are changing the food industry before our eyes. Once-revolutionary processing methods are becoming more common, but they still pose challenges, especially when it comes to scaling up production and moving from the laboratory to the industrial stage. In this topic, most attention in scientific publications is devoted to processing technologies using, among others, high pressure, pulsed electric field, ultrasound, cold plasma, microwaves, and infrared, to name just a few. Nanotechnology is also gaining increasing interest as an emerging technology in the areas of food processing, safety, and packaging. The food industry is beginning to use it to develop nanoscale ingredients that improve the quality, color, texture, and taste of products, as well as to develop food packaging materials. This Special Issue of Applied Sciences highlights new and emerging technologies used in food processing to provide consumers with safer, nutritious, flavorful, and pathogen-free foods with extended shelf life. We invite authors to submit both research and review articles.

All manuscripts are thoroughly refereed through a single-blind peer-review process.
