Special Issue Information

Dear Colleagues,

Crops contain a variety of compounds with antioxidant properties. These antioxidants help protect the plant from oxidative stress and damage caused by factors like UV radiation, increased overall irradiation, drought, heat, chilling, salinity, metal deficiency, metal excess, pests, and diseases. On the other hand, the human consumption of crop products that are high in antioxidants has been linked to a range of health benefits. Some of the key antioxidants found in crops are carotenoids, vitamin C, vitamin E (tocopherols and tocotrienols), phenolic compounds, and selenium, as well as a variety of antioxidative enzymes. The antioxidant activity in crops can vary depending on factors such as the genotype and growing conditions that mutually interact due to different metabolic pathways (e.g., photosynthesis), as well as processing methods. Furthermore, some genetic material of crops generated using genetic modification or new plant genomic techniques may have much higher levels of specific antioxidants than their conventional counterparts. Additionally, processing methods like milling and cooking can influence the availability of these antioxidants. This Special Issue entitled “Antioxidant Activity in Crops” is devoted to collecting the latest findings covering genetics, physiology, omics studies, the chemistry of antioxidants in crop plants growing under stress, multiple-stress, or non-stress conditions, biotechnology, as well as the contents and bioavailability of antioxidant compounds in grain relevant to feed, food, and the pharmaceutical industry. Both mechanistic and holistic approaches are welcome.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Antioxidants is an international peer-reviewed open access monthly journal published by MDPI.
