Special Issue Information

The beneficial effects of fruit consumption on human health are derived not only from essential nutrients and vitamins, but also from the bioactive nature of certain phytochemicals. The favourable effects of many fruits are related to their antioxidant properties, and they have been proposed as valuable to prevent cardiovascular and neurodegenerative diseases, as well as certain cancers. Among fruit antioxidants, chlorophylls, anthocyanins and carotenoids are of particular relevance because, being pigments, they are also visually appealing. Enhancing nutraceutical and aesthetic/commercial fruit quality is relevant from the consumer point of view, as consumers are increasingly concerned about healthier nutrition.

The aim of this Special Issue, entitled "Antioxidants in Fruits: Genetics and Biotechnology", is to present the most recent research work to deepen the knowledge pertaining to the biosynthetic pathways of fruit antioxidant compounds and their effects on human health, with particular emphasis on recent developments in breeding and biotechnology efforts directed to improve their content and/or beneficial profiles. Therefore, full research articles and reviews from diverse disciplines (biology, biochemistry, genetics, biotechnology and nutrition) covering this topic will be accepted.
