Special Issue Information

Dear Colleagues,

Over the preceding years, society has assisted in the increase in the rate of chronic metabolic diseases, some of which may derive from alterations of the intracellular redox system and the triggering of cellular and systemic inflammatory responses. Among the components of lifestyle and personal habits, diet plays a central role in human health and in both the development and prevention of numerous pathologies. It is accepted that the adherence to balanced and healthy dietary patterns may assist in maintaining a healthy status and preventing the development of diseases. In the framework of a healthy diet, not only traditional foodstuffs, but also novel and functional foods such as symbiotic foods or edible insects, may provide additional health benefits. In fact, they may play a role in modulating important physiological processes, such as the oxidative, inflammatory and other immune responses to meal consumption at the gut level, as well as the pathological processes linked to the development of chronic conditions.

The goal of this Special Issue is to gather updated information regarding the role of functional and novel foods on the modulation of the oxidative stress and inflammatory response, including recent knowledge from clinical studies and basic research. To that end, both original papers and review articles are welcome. Possible topics, include but are not limited to:

  • Modulation of oxidative stress and/or inflammation by foods, ingredients or single compounds by means of human dietary intervention trials;
  • In vitro studies using cellular models to evaluate the potential role of functional or novel foods;
  • Animal in vivo studies assessing the ability of novel and functional foods in modulating the oxidative and/or inflammatory response.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Antioxidants is an international peer-reviewed open access monthly journal published by MDPI.

Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2900 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
