Reviewer 2 Report

In this paper, the polyphenols content, microstructure and secondary metabolites composition of CAL before and after fermentation were investigated. However, some modifications should be revised before accepting for publication.

1. Lines:81. Pay attention to the writing norms, there are errors in the writing of °C

2. Lines:177-179. Can the author identify the holes in the FCAL surface structure in Figure 2? In terms of the conclusion that the microstructure of the matrix material changes and thus affects the retention and release of bioactive substances in the matrix material, detailed analysis can be combined with their own experimental data. How the microstructure change of the matrix material specifically affects the retention and release of bioactive substances in the matrix material.

3. Lines:129. Does the author need to add spaces between numbers and °C symbols? Context should remain format consistent. Does the author need to add spaces before parentheses? Pay attention to writing format specification.

Round 2

Reviewer 1 Report

All my observarion in the manuscript. Probably the paper will be better if the chemical analysis were performed not in a mixture of aereal parts.
