Special Issue Information

Dear Colleagues,

We are launching a Special Issue entitled “Compositional and Functional Characteristics of Small Ruminants’ Milk and Dairy”.

The consumption of sheep and goat milk and dairy is an old practice consolidated in different geographical areas of the world. The key elements that determine the quality of these dairy products are breed, feed, regional traditions, water and climate. In recent decades, consumer demand and acceptance of these traditional non-cow dairy products has been growing, opening new economic scenarios for their breeding. We kindly invite you to contribute to this Special Issue with original research or review articles on the composition, technological quality, feeding and farm practices, and control of the whole chain system from farm to table, as well as the potential health benefits of these non-bovine milk and dairy products. Omics approaches will be greatly welcomed.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Dairy is an international peer-reviewed open access quarterly journal published by MDPI.
