Special Issue Information

Dear Colleagues,

One of the most exciting areas of food chemistry is the role played by natural colorants, which represent a crucial aspect of our investigation. These colorants can be obtained from diverse natural sources, offering not only vibrant and spectacular colors but also interesting bioactive properties. This allows us to explore them as bioactive ingredients for various industrial applications.

Research on natural colorants in the field of food chemistry goes beyond mere aesthetics; it delves deeper into understanding their potential bioactivities. Natural colorants have shown noteworthy bioactive potential, particularly as antioxidants, anti-inflammatory agents, antibacterials, antivirals, and other health-promoting effects. Consequently, this opens up possibilities for applying these compounds in various industries, including food, pharmaceuticals, and cosmetics.

In this Special Issue, titled “Natural Colorants in Food Chemistry”, we aim to shed light on review articles and innovative, disruptive research that focuses on untangling the deep knowledge of natural colorants. Researchers are encouraged to address fundamental questions regarding the utilization and application of these compounds, focusing on the roles they play in different industries. Key themes to be explored in this Special Issue include novel extraction methodologies for natural colorants, the comprehensive characterization of these pigments, the elucidation of their bioactive mechanisms, and the development of tailored formulations incorporating these natural colorants.

We hope that all of you feel compelled to contribute, such that our understanding of the multifaceted applications and bioactive properties of natural colorants in the field of food chemistry can be enhanced.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
