Special Issue Information

Dear Colleagues,

In recent decades, interest in the consumption of plant-derived foods has grown exponentially due to their health benefits. Among the best sources of plant-derived antioxidants are fruits, vegetables, spices, seeds, cereals and grains. However, various parts of plants such as leaves, seeds, husks, stems and roots can generate large amounts of waste and pose an environmental problem. Therefore, these by-products can be investigated as potential sources of natural antioxidant compounds, improving the quality of products and, at the same time, reducing environmental problems.

Therefore, the purpose of this Special Issue, entitled "Antioxidant Activity in Plants and Horticultural By-Products", is to present current and innovative research and review articles on the antioxidant capacity and compounds of plants and their by-products, as well as their possible application in food, nutraceuticals, cosmetics and packaging. Also of interest are pre- and post-harvest studies that develop techniques to improve or preserve antioxidant capacity in horticultural products, and studies on extraction processes, isolation and quantification, and biological activity both in vitro and in vivo.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Horticulturae is an international peer-reviewed open access monthly journal published by MDPI.
