Special Issue Information

Dear Colleagues,

This Special Issue of Molecules addresses new contributions related to the development and application of surface-enhanced Raman scattering (SERS)-based sensors in the field of Food Science.

SERS is an attractive technique and a versatile analytical tool in the field of Food Science. SERS-based analyses are platforms for the detection of pesticides, antibiotics, pathogens, and toxins to be reported. In general, SERS-based sensors have the advantages of being simple to conduct, rapid to respond, ultra-sensitive, and capable to provide fingerprint spectra of analytes. This Special Issue aims to draw a picture of the recent advances of SERS-based sensors in the field of Food Science, including but not limited to chemical and bacterial contaminants detection and food authenticity analysis.

We invite authors to submit both original and review articles dealing with the development and application of SERS-based sensors, focusing on SERS-based sensors for food safety and quality analysis.
