Special Issue Information

Dear Colleagues,

Anthocyanins are plant-derived secondary metabolites that are ubiquitous in the plant kingdom. They have been regarded as a promising source of natural colorant. During the last few decades, increasing evidence indicates that anthocyanins have health-promoting effects on human physiology and disease. Although anthocyanins have been shown to have a wide range of bioactivities (e.g., antioxidant, anti-diabetes, anti-cancer, anti-inflammatory), their underlying molecular mechanisms are still far from being recognized. Furthermore, many natural anthocyanins cannot be efficiently extracted, which hinders studies to determine their bioactivities. Therefore, new approaches are needed to extract anthocyanins from a diverse range of plants. The interest in the study of bioactive anthocyanins has greatly increased in recent years. All information collected in this special Issue will contribute to a better understanding of the health benefits of anthocyanins.

This Special Issue is focused on original research and review articles that cover the topics including new techniques for the isolation and characterization of novel anthocyanins from plants; elucidation of the bioavailability, absorption, and metabolism of anthocyanins; investigations of the bioactivities of natural anthocyanins, their health-promoting effects on chronic diseases and molecular mechanisms of action; and the development of new delivery systems to improve the bioavailability and bioactivity of natural anthocyanins.

Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
