Special Issue Information

Dear Colleagues,

The assurance of quality and safety during food processing and production is of major importance, as this greatly impacts human and environmental health.

Recently, new feasible methods for the characterization of food products have been developed. Still, considering the complexity of food matrices and nutrients’ complex structure, new challenges are arising daily. This Special Issue aims to highlight analysis methods including, but not limited to, spectroscopic techniques such as near-infrared (NIR), laser-induced breakdown, hyperspectral imaging, and chemometry. We encourage all researchers to present their newest, outstanding results, or reviews related to food quality assessment.

The emphasis should be on developing and optimizing analysis tools which are complementary to the current trends of minimal processing, and that evidence food trace bioelements or biomolecules that might affect food products’ quality and preservation.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
