Special Issue Information

Dear Colleagues,

Plants contain several secondary metabolites with health benefits. These compounds, also called phytochemicals, are widely distributed in all plant-based foods, such as vegetables, fruits, cereals and pseudocereals, seeds, nuts, and legumes, but also in aromatic and medicinal plants. Phytochemicals include phenolic compounds, vitamins, minerals, alkaloids, terpenoids, tocopherols and carotenoids, among others, and all of these compounds play an important role in managing the incidence of chronic diseases.

The complex molecular structures of these phytochemicals encourage researchers to investigate different natural sources of plant-based foods, including agro-food residues. In this way, the identification and quantification of these bioactive compounds are crucial in order to understand their biological activity.

The aim of this Special Issue is to present advanced analytical approaches, including the extraction, isolation and characterization of active compounds in plants and plant-based foods and their by-products. Evaluations of the bioactivity, bioavailability and bioaccessibility of these bioactive compounds are also welcome.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
