Special Issue Information

Dear Colleagues,

Eggs contain several bioactive components including proteins, peptides, fats, and micronutrients. Several health-benefiting properties such as antioxidant, anti-inflammatory, anti-cancer, immunomodulatory, anti-hypertensive and anti-diabetic activities have been reported for several egg-derived compounds. Recently, there has been a growing interest among food industries to develop functional foods/health foods from eggs/egg-derived compounds for the promotion of human health. The development of functional foods with eggs/egg-derived compounds would enhance human health and benefit the food industry.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
